Veg biryani is flavorful and aromatic rice dish everyone enjoys eating. It is an easy dish to prepare when you have a lot of guests at home. When you make biryani, you don’t have to prepare many side dishes because biryani is enough to please many.

Veg Biryani Recipe: About Main Ingredients

  • While making biryani, you should be using aged basmati. Aged basmati rice brings flavors to the biryani. You can use other types of rice as well, but basmati rice is the most preferred rice to make biryani.
  • You can use either ghee or oil to make veg biryani. Make sure you use high-quality ghee or oil because it impacts the taste of biryani. This recipe uses oil. You can use the same amount of ghee instead of oil while preparing veg biryani.
  • Use fresh vegetables as flavor in the biryani also depends on the vegetables used.
  • Whole spices are the key ingredients, so don’t skip using them. And while using powder masala, makes sure you are using good quality masala.
  • Use plain curd. Whisk the curd before you use it so that it doesn’t split.

  • Basmati rice
  • Oil
  • Curd
  • Onion
  • Lemon juice
  • Green chili
  • Ginger garlic paste
  • Coriander leaves
  • Slat
  • Red chili powder
  • Turmeric powder
  • Garam masala
  • Bay leaf
  • Cumin seeds
  • Cinnamon
  • Green cardamom
  • Clove
  • Cauliflower
  • Green peas
  • Carrot

When you are ready with all the ingredients, get ready to prepare veg biryani.

Veg Biryani Recipe: Instructions

Step 1:

The first step is to soak rice for 20 minutes. You will need one cup of Basmati rice to soak.

Step 2:

Meanwhile, you can chop all the vegetables. You will need one medium-sized onion, one-third cauliflower, one medium-size carrot, and peas. Chop onion into fine pieces and keep it aside.

Chop the carrot about an inch long. Make sure that chopped carrot is not thick. After that, you can chop cauliflower. You can chop the cauliflower a little smaller than the normal size. Then peel the green peas.

Put all the vegetables a side. You will need them in the next steps. You can increase or decrease the vegetables as per your choice.

Step 3:

After 20 minutes of soaking rice, drain the water completely and keep the rice aside. You can soak the rice for more than 20 minutes but make sure you don’t decrease the soaking time.

Step 4:

Now heat the pressure cooker with two tablespoons of oil on medium-low flame. After the oil is heated, add one bay lead, 1-inch cinnamon stick, two or three green cardamom, and half teaspoon cumin seeds. Roast it for about two minutes.

Step 5:

After two minutes or so, spices start to crackle, then you can add one medium size finely chopped onion and one chopped green chili. Allow it to cook until the onion turns golden brown.

Step 6:

 Now you need to add one teaspoon ginger-garlic paste. Cook until the raw smell of ginger-garlic goes off. You might have to cook for about 2 minutes.

Step 7:

Now you need to add chopped vegetables. You will need one full cup of mixed vegetables i.e., chopped cauliflower, chopped carrots, and green peas. You can use the ratio of these vegetables as per your preference. Add all the chopped vegetables and allow them to cook for 4 minutes on high flame. Stir in intervals.

You can cook the vegetables on medium flame. Cook time may be more or less than 4 minutes depending upon the size of the vegetables.

Step 8:

Next, you need to add powder spices. Add half teaspoon garam masala, half teaspoon chili powder, one-third teaspoon turmeric powder, three to four tablespoons curd, and salt as per your taste. Mix it well and let it cook for another 3 minutes.

Step 9:

Spread vegetables making an even layer. Then add basmati rice. Spread it over the vegetables, making another fine layer.

Step 10:

Now take a glass of water, then add half a teaspoon of salt. Mix the salt with water. Check whether the water is salty or not water has to be slightly salty. If required, add more salt.  

Step 11:

Add one cup of water to the pressure cooker. Cover the pressure cooker with a lid and allow it to cook on a medium flame for one whistle.

Step 12:

Manually release the pressure with the help of a spoon. When all the pressure is released, open the lid and give it a good mix.

Step 13:

Allow it to cool down. Then you can add lemon juice if you desired. You can also add chopped coriander leaves.

Veg biryani is ready to be served.
